Doctor by the Universidad de Sevilla with the thesis Evaluacion espectrofotometrica de constantes de acidez de equilibrios de protolisis simultaneos aplicacion al acido isonicotinico y la biacetilmonoxima isonicotinoilhidrazona 1991. Supervised by Dr. Agustín García Asuero.

My research activity has focused on the food field, developing analytical methodologies for chemical characterization (phenolic, volatile composition, metals) and food quality control and its application to the study of functional foods, especially, by means of chromatographic and spectrometric techniques. My medium-term scientific interests focus on the design and development of functional foods and the application of omic methodologies for the characterization and quality control of them. Likewise, the use of new natural solvents, based on eutectic mixtures, for the extraction of bioactive compounds from agroindustrial by-products generated in the different stages of processing food (wine, oil, ...), constitutes another of our research lines.
