Résumé

Fishery products have had in the last 25 years strong demand, which is reflected in the overexploitation of stocks while consumer prices have risen sharply. The development of aquaculture and market presence of frozen products has been a decline in the demand for fresh fish and thus a relative biological recovery of fish species. However, this has not contributed to the preservation of traditional fishing resources and the traditional demand is focused on a few species that have not been replaced by other products, but instead, that demand has increased with the knowledge that ensures the health of fish consumption, which has come to a greater number of applicants and a decrease of consumer price. Despite these assumptions, data about it are few and far between, and never has been compared fresh fish consumption in relation to other offers and much less in areas with a high availability of original fish products. The present study focuses its objectives in the structural analysis of the consumption of fresh and frozen fish products, considering biological species, origin of the products, landings of them and distribution chain to final consumer prices in a fishing village first category, Isla Cristina (Huelva).
