Abstract
In order to know the sanitary quality and risk of refrigerated chicken, a microbial study has been done in this food to get information about possible contaminant microorganisms. As Spanish regulatory limits are not fixed, CeNAM (Centro Nacional de Alimentación y Nutrición) criteria, have been used. Out-of-limits countings have been found for Enterobacteriaceae, E.coli, Aerobic Bacteria, Cl. perfringens and St. aureus in 98.03%, 84.31%, 29.91%, 19.60% and 43.13%, respectively, of samples analyzed. Pathogens as Salmonella and Campylobacter, , were also found in 21.56% and 11.76% of samples.
