The Denominations of Quality (DC) arise in order to create a competitive framework for (traditional) producers and protection (guarantee) for consumers. From the perspective of producers, an instrument for local development has been seen in DC, materialized through Protected Designations of Origin (PDO) and Protected Geographical Indications (PGI), which has repercussions on producers (farmers and ranchers) and processors. (industry), but also on the image of the territory (sustainability, tradition...), tourist activities (which promote the demand for traditional products, carry out territorial marketing...). The central objective of this work is to establish a methodology based on interviews and questionnaires to intervening actors to determine the local development processes generated by the PDO Jabugo on the Sierra de Huelva region (Andalusia, Spain) from internal variables (business), contextual (environment), sectoral (of the Iberian pig sector and the meat industry) and the process of local development generated (as a result).
